Ingredients:

For the Duck Pancakes:

2 cups all-purpose flour

1 teaspoon salt

1 cup hot water

Cooking oil

For the Filling:

1 whole duck, cooked and shredded

Hoisin sauce

Plum sauce

Thinly sliced cucumber

Finely chopped scallions

Preparation Method(Duck Pancakes Dough)

1.In a large mixing bowl, combine the flour and salt.

2.Gradually add the hot water, mixing continuously until a smooth dough forms.

3.Knead the dough for 5-7 minutes until it becomes elastic and no longer sticky.

4.Divide the dough into equal-sized balls. Cover with a damp cloth and let rest for 30 minutes.

Preparation Method(Filling)

1.Shred the cooked duck meat into thin strips.

2.In a small bowl, combine hoisin sauce and plum sauce to your desired taste.

3.Thinly slice the cucumber and finely chop the scallions.

Assembling the Duck Pancakes:

1.Heat a non-stick pan over medium heat.

2.Take one dough ball and flatten it into a thin circle using a rolling pin.

3.Brush the pan with a small amount of oil.

4.Place the flattened dough in the pan and cook for 20-30 seconds per side, or until slightly golden brown.

5.Spread a generous amount of hoisin-plum sauce on the pancake.

6.Top with shredded duck meat, cucumber slices, and scallions.

7.Roll the pancake tightly, starting from one side.

8.Repeat steps 1-7 with remaining dough balls and filling ingredients.
